Recipes: Vegetable Stuffed Tomatoes
4 servings to serve special people!

Ingredients:

  • 8 large tomatoes
  • 6 toast bread slices
  • 2 tablespoons "ELEA" Extra Virgin Olive Oil
  • 3 tablespoons red vinegar
  • 1 boiled egg
  • 1 whole trimmed garlic
  • 5 small size pickles
  • 3 fresh onions trimmed
  • 2 trimmed filets of anchovies
  • 2 tablespoons of well washed capers
  • 1 bunch of parsley-leaves only-no stems
  • Salt and black pepper

Preparation:

  1. Cut the tomatoes in half and empty their interior. Mix the vinegar with the toast bread slices and press them down with a fork until mashed.
  2. Chop up all the remaining ingredients including the tomatoes interior and the bread. Mix everything together very well with the "ELEA" Extra Virgin Olive Oil . You are now ready to stuff the tomatoes. Served cold.
