Ingredients:
- 8 large tomatoes
- 6 toast bread slices
- 2 tablespoons "ELEA" Extra Virgin Olive Oil
- 3 tablespoons red vinegar
- 1 boiled egg
- 1 whole trimmed garlic
- 5 small size pickles
- 3 fresh onions trimmed
- 2 trimmed filets of anchovies
- 2 tablespoons of well washed capers
- 1 bunch of parsley-leaves only-no stems
- Salt and black pepper
Preparation:
- Cut the tomatoes in half and empty their interior. Mix the
vinegar with the toast bread slices and press them down with
a fork until mashed.
- Chop up all the remaining ingredients including the tomatoes
interior and the bread. Mix everything together very well with
the "ELEA" Extra Virgin Olive Oil . You are now ready
to stuff the tomatoes. Served cold.
