Ingredients:
- 1/2 cup chopped onion
- 1 chopped green pepper
- 1/2 a tea cup "ELEA" Extra Virgin Olive Oil
- 1 ( 4 oz. ) can sliced mushrooms
- 2 ( 8 oz. ) cans tomato sauce
- 1/4 teaspoon powdered thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 8 oz. uncooked medium noodles
- 3/4 cup water
- 1 cup drained, canned peas
- 1/4 cup grated Parmesan cheese
Preparation:
- Combine onion, green pepper and "ELEA" Olive Oil
in 2-quart casserole. Cook in pre-heated oven for 2 minutes.
Stir every 30 seconds.
- Stir in mushrooms with liquid, tomato sauce and seasonings.
Cook in pre-heated oven for 2 minutes.
- Stir in noodles and water. Cook, covered, in pre-heated oven
for 12 minutes, or until noodles are just tender. Stir halfway
through cooking time.
- Stir in peas. Cool. Stir mixture.
- Sprinkle with grated Parmesan cheese.
