Recipes: Roman Noodles

Ingredients:

  • 1/2 cup chopped onion
  • 1 chopped green pepper
  • 1/2 a tea cup "ELEA" Extra Virgin Olive Oil
  • 1 ( 4 oz. ) can sliced mushrooms
  • 2 ( 8 oz. ) cans tomato sauce
  • 1/4 teaspoon powdered thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 oz. uncooked medium noodles
  • 3/4 cup water
  • 1 cup drained, canned peas
  • 1/4 cup grated Parmesan cheese

Preparation:

  1. Combine onion, green pepper and "ELEA" Olive Oil in 2-quart casserole. Cook in pre-heated oven for 2 minutes. Stir every 30 seconds.
  2. Stir in mushrooms with liquid, tomato sauce and seasonings. Cook in pre-heated oven for 2 minutes.
  3. Stir in noodles and water. Cook, covered, in pre-heated oven for 12 minutes, or until noodles are just tender. Stir halfway through cooking time.
  4. Stir in peas. Cool. Stir mixture.
  5. Sprinkle with grated Parmesan cheese.
